MOROCCAN FISH TAGINE, TAGINE DE PESCADO

                                                               Morrocan Fish Tagine

Ingredients:
4 Salmon Fillets
1/2 red pepper in strips
1/2 green pepper in strips
5 crushed garlic cloves
1/2 pickled lemon + 2 tbsp of its juice ( if you don't have it substitute by fresh lemon)
1/2 bunch cilantro, washed and cut up
1 small can diced tomatoes
1- 2 tbsp tomato paste
1 tbsp good hungarian paprika
crushed chilies to taste ( this item can be omited)
salt, pepper to taste
1/2 C Oil

In a shallow teflon pan ( good frying pan) heat oil, pour paprika and garlic, stir for a second not much longer just to get the oils out, otherwise it will burn and get bitter taste,
Add diced tomatoes and paste and stir
Add spices and pickled lemon or fresh
Arrange fish fillets on top
Cover with peppers, cilantro
Cover, when it comes to a boil, lower heat and simmer for 20 mn or until done in the center.

Serve as a first course or main, ENJOY!

                                   RECETA DE NUESTRO PESCADO MAROQUI

Ingredientes:
1 filetes de Salmon
1/2 pimiento colorado cortado en tiras
1/2 pimiento verde cortado en tiras
5 dientes de ajo majado or picado
1/2 limon curado + 2 cucharas de su jugo ( si no es disponible usen el fresco)
1/2 manojo de culantro lavado y picado
1 lata de tomate en trozos
1-2 cucharas de puree de tomate
1 cuchara de buena paprika hungara
Chillies picantes a discrecion
Sal, pimienta
1/2 C aceite

En una sarten teflon se calienta el aceite, se pasa la paprika y el ajo solo un segundo para que no se queme, si no se pone oscuro y amargo.
Anadir los tomates y el pure y mesclar
Anadir especias y lemon
Poner los filetes encima
Cubrir con los pimientos y culantro
Tapar, despues del primer herbor, bajar la llama y dejar cocer por 20 mn o hasta que el centro este cocido.

Servir como primer plato o principal, QUE APROVECHE!!

Amazing quinoa salad, ensalada de quinoa deliciosa

I just developped this recipe let me know how you like it
Acabo de inventar esta receta, a ver si os gusta..
1 C quinoa, cooked in 2 C salted water
1 can cut hearts of palm
1 can black beans, drained and rinsed
1/2 C cooked brown rice
1/2 red pepper diced
5 asparagus cooked and cut
1/2 bunch chopped cilantro
5  green onions chopped
juice of 1 lemon
olive oil, salt, pepper, garlic powder to taste

Mix all the ingredients and enjoy!



1 taza quinoa, hervido con sal en 2 tazas de agua
1 lata de palmitos en  trozos
1 lata de frijoles negros, escurridos y lavados
1/2 taza de arrow moreno cocinado
1/2 pimiento rojo cortadito
5 esparagos cocinados y picados
1/2 manojo de culantro picado
5 cebolletas verdes picadas
jugo de 1 limon
aceite de oliva, sal, pimienta, ajo en polvo a gusto

Mesclar todos los ingredientes y que aproveche!!!

Multi seed Hallah buns or loaf,

5-5 1/2 cups bread flour
2 eggs lightly beaten
1 pkg active dry yeast or one cube fresh (always check date)
1 1/4 C warm water( about 110 degrees)
1 tsp salt
1/2 C sugar( 1/4 can be used for less sugar)
1/4 C oil
1 egg yolk
1 tbsp water

Multi seed mixture
1 tbsp sesame seeds
1tbsp poppy seed
1 tbsp Zahtar (can be omitted)
1 tbsp dried onion flakes
1 tbsp kosher salt
1tbsp flax seeds
Mix and keep aside till buns are ready.

In large bowl, dissolve yeast in warm water. Stir in salt, sugar, oil, eggs. Gradually beat in 5C  flour to make dough. Add the rest slowly as needed
Turn dough out into a floured board and knead until smooth add flour if necessary to prevent sticking. Place in a bowl very lightly oiled , turn to grease top. Cover and let rise in a warm place until doubled (about 1 1/2 hrs) Punch dough down, knead briefly on a lightly floured board.
Cut into equal parts, form ropes to make knot buns
Preheat oven at 350, beat together egg  yolk tablespoon of water, pinch salt, spread evenly over buns using soft brush, sprinkle with seed mixture
Bake for 30-35mn or until golden brown and sound hollow when tapped. Let cool on wire rack

mi variation del Minestrone, una buena sopa de invierno, a good winter soup

1 can diced tomatoes,
1 can tomato puree
1 onion
3 garlic cloves
1C frozen vegetables
1 diced zucchini
1 can black beans
1 can red beans
1/2 C small pasta (orzo, pasta barley)
1/2 bunch cilantro
Salt, pepper to taste
1 tsp Oregano
Water to cover

In a soup pot, mix all the ingredients except cilantro, bring to boil, lower heat and simmer for 30-40 mn, add water if necessary.

May be served with grated Parmesan
